Sunday Sweet...Mini Ice Cream Sandwiches

I remember as a kid, sitting with a box of Nilla Waffers and a glass of milk watching cartoons.  I just loved those cookies.  Sometimes mom would put a bit of icing in the middle and make little "sandwiches."  And of course using Nilla Waffers in delicious banana pudding.  But, we never made these!  After last weeks time consuming cupcake creation, I figured this week we'd do something ridiculously easy.  (plus, it's Mother's Day...I can't believe I'm lifting a finger to make anything)  ;)

We're going to use mini chocolate chips for dipping.  You could also use, coconut, rainbow sprinkles, or any other decorative item you have in your cupboard.  Looking forward to making this special little treat, on this special day, with the two most special people in my life.  (okay, maybe I'll drag the hubby into and make it a whole family affair.)  Happy "cooking!"  :)

Recipe adapted from the Food Network


  • 1/2 cup light vanilla ice cream or frozen yogurt, softened at room temperature (or flavor of your choosing!)
  • 24 vanilla wafer cookies (11/2 inches in diameter)
  • 1 ounce dark or bittersweet chocolate (60% to 70% cocoa solids), finely chopped
Here's my ingredients:


Line a shallow storage container with wax paper. Put a small scoop of ice cream (about 2 teaspoons) on a cookie and top with another cookie. Roll the ice cream sandwich in the chopped chocolate so the chocolate adheres to the ice cream. Place in the wax paper-lined container. Repeat with the remaining ingredients until you have 12 ice cream sandwiches.
Cover and place in the freezer to set for at least 30 minutes, or freeze for up to 1 week.
