Healthy Baked Corn-flake Crusted Fish

Pin It Now!
I am still hunting for really good fish recipes.  So far, my fave way to eat our fresh fish is either my husbands amazing civeche or my baja fish tacos.  I tried baking the fillets, but didn't really enjoy it much.  Tried pan searing...eh.  It was okay.
Then, I found this recipe.  I love that it's not fried (since I fry my fish tacos) and that it is super easy to do.
We had friends over and the fish didn't last long at all.  The corn flakes were nice and crunchy and the fish was so tender.  We used grouper, but you could use any nice flaky fish for this.  Totally going into the fish rotation!

Ingredients
4 (6-ounce) grouper or other firm white fish fillets
1/2 teaspoon ground red pepper flakes
1/4 teaspoon cumin
1 1/2 teaspoon paprika
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/3 cup all-purpose flour
1 large egg white
3/4 cup crushed cornflakes
Vegetable cooking spray
1 Lemon, cut into wedges

Directions
  1. Preheat oven to 425°F. Spray a large baking pan with cooking spray or line with nonstick aluminum foil. Spray a rack with cooking spray.
  2. Sprinkle fish with red pepper, paprika, cumin, salt, and 1/8 teaspoon black pepper.
  3. Place flour in a shallow dish. Whisk egg white and 1 tablespoon water in a medium bowl. Place cornflake crumbs in a shallow dish. Dredge fish in flour, shake off excess, and dip in egg white mixture. Dredge in cornflakes, coating completely.
  4. Place the prepared wire rack coated with cooking spray inside the large baking pan. Arrange fish in a single layer on rack; coat top of fish lightly with cooking spray, and bake 12 to 15 minutes or until crisp and browned. Serve with side salad and lemon wedges.

Memorial Weekend Menu- Smoker Style

Pin It Now! There's nothing I love more than cooking up a feast for friends.  The best part is that my husband is a genius with the smoker.  It doesn't matter what he puts under the hood of that baby...it comes out smoked to perfection and full of flavor.  This coming weekend we're planning on smoking ribs, a tri-tip, red snapper and hubby is going to actually smoke some squid (that should be interesting).

Since he'll be manning the meat it's up to me to dish out some wicked sides.  No BBQ is ever complete without a killer pasta salad, and this recipe for Bacon Ranch Pasta Salad should do the trick.  And of course, I can't pass up all this fabulous corn that's on sale!!  Found a great recipe for some Grilled Mexican Corn.  This is shaping up to be a great menu!  Can't wait to eat!

Incredible Tuna Poke

Pin It Now! My husband went with a buddy to the fish market last Saturday.  He came home with a gorgeous piece of fresh ahi tuna.  I'm one of those people who prefer their fish raw to cooked...so, when he suggested making a tuna poke, I was all for it!

Let me tell you, this was like candy (fabulous little fish candy).  It seemed to just melt in my mouth.  Absolutely incredible and I was so sad when it was all gone.  Couldn't this be like "Best Thing You Ever Ate" and a plate would just magically appear in front of me right now??  Just the smell of it while he was preparing the dish had me drooling.  (while I sat on the couch and read my book...love when he cooks for me!)  :)  I seriously want him to get up every Saturday morning at 3:45am and go to the market just for this ahi.  I could eat this every day.  If you can get your hands on some great tuna, you have to try this recipe...you'll totally surprise friends and family who'll think you got takeout from the local sushi joint.

If only you could eat a picture....

Friday (5/27): Simple Seared Scallops and Wilted Arugula Salad

Pin It Now! My husband and his friend went to the local fish market last Saturday morning.  We were hoping to find some fresh scallops, but he came back with frozen.  I wanted to make sure I cooked these right so that they weren't mushy and chewy.  (if you can get fresh, do it, much easier to cook.)
When I looked for info about cooking the frozen version, this is what I found:
Take the time to let the scallops thaw in the fridge overnight.  Then make sure they are good and dry (pat with paper towels)  Wet scallops will not sear properly.
We're serving this with Emeril's arugula salad.  (and maybe some kind of starch for the girls)

Mother's Day Feast

Pin It Now! Mother's Day can mean so many different things to so many different women.  Some like to have an entire day to themselves, others like to spend the whole day with their family.  I find myself in the middle of both.  I want to be pampered a bit, a little down time, but I also want to be with those who've made this day mean something to me.

We'll be spending our day tomorrow something like this:
Girls and daddy will be making a gorgeous breakfast: Creme Brulee French Toast.

Followed by a trip to the Farmer's Market and then some fun in the sun at the beach.  Nap time for girls and reading time for mom, while my hubby shops for dinner goods.  Then he and I will prepare our dinner feast.  I truly don't mind a bit of cooking on Mother's Day...blame it on my need to always be doing something.  We've come up with a brilliant plan for dinner...

Ultimate Fish Tacos

Pin It Now!
Time to get some fish back on the menu.  Living in Cali I have finally learned to be open to fish tacos...and I've found I really like them.  This recipe got great reviews, so I'm going to give it a shot.  I'll cut back the spice a bit for the sake of the kiddos.  :)  There seem to be a lot of ingredients, but you can chose to make the mayo and salsa or leave it out.  I'm going to make both...why not, and I'll puree the salsa so the kids won't have to worry about chunks of whatever.

Menu for March 21-24- Monday: Ginger-Garlic Tuna Burgers on Cucumber Salad

Pin It Now! Monday:  Ginger-Garlic Tuna Burgers on Cucumber Salad

This is a Rachel Ray recipe.  I tried to find a link for it, but no luck.  So typing it in for you.  :)  This sounds light and fresh and looks like a great way to start off the week!

Thursday: Fish Sticks

Pin It Now! *Quick and Easy!
Yeah, you read that right.  Good ol' fish sticks.  My friend gave me a great recipe and we made some a couple weekends ago.  SO good...(and I grew up dousing my fish sticks in ketchup just to get them down.)  These are great and the kids LOVE them!  Serve with a side of veggies or a fresh salad.

At Costco, you can buy a bag of frozen Mahi Mahi fish.  They are individually sealed so you can use as much or as little as you need.  Light tasting fish.

Tuesday: Shrimp Etouffee

Pin It Now! In honor of Fat Tuesday, I'm going to attempt my first Shrimp Etouffee.  I'll be toning down the spices for the sake of my girls, but I'll separate it and re-season for me and the hubby.  (and knowing him, he'll add even more)  Hoping this turns out well!

Menu for Feb 22nd-25th... Tuesday: Crab and Asian Slaw

Pin It Now! So, I have been inspired by the great Julia Child.  I finally watched the movie "Julie and Julia" and I found myself wanting to rush out and by her book before the movie was even over!  The best part, is that I have learned that I have been making some mistakes in my cooking and through her, I'll be cooking better!  I'm going to try and create one dish a week from her famous cookbook.  This weeks will come on Thursday!  If you've made something you call a family fave, don't hesitate to share!

Tuesday:  great sale on Dungeness crab at Vons...keeping the crab simple, just going to re-heat (since already cooked) and serve with a side of melted butter and perhaps cocktail sauce.  Going to make this lovely sounding slaw for the side.
