Thursday: Fish Sticks

Yeah, you read that right.  Good ol' fish sticks.  My friend gave me a great recipe and we made some a couple weekends ago.  SO good...(and I grew up dousing my fish sticks in ketchup just to get them down.)  These are great and the kids LOVE them!  Serve with a side of veggies or a fresh salad.


At Costco, you can buy a bag of frozen Mahi Mahi fish.  They are individually sealed so you can use as much or as little as you need.  Light tasting fish.



Fish Sticks:



Ingredients:


Mahi Mahi (or other light white fish)
2 eggs beaten
1-2 cups Panko bread crumbs (Japanese...find them in the Asian aisle)
Peanut Oil


To thaw fish, soak in cold water in a bowl until thawed.


Beat eggs in a shallow dish, set aside.  In another shallow dish, add Panko.  Take your fish and cut into 2 to 3 finger thick pieces (since each portion is varied size, it'll change how many "sticks" you get)  Use the width of one of your fingers to gage where to cut.


Heat 1/2 cup Peanut Oil (you may need to add more during cooking) in a large skillet using moderate heat.


Dip the fish in the egg, then into the Panko.  Place fish into oil and cook until nicely browned.


Here's a great dip for the fish:



  • 1/2 cup light mayonnaise
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice, plus lemon wedges for serving
  • 2 teaspoons prepared white horseradish
Combine all together and serve with fish sticks.
