Surfing the net. Looking for some new and interesting chicken dishes. I get bored easily. Need constant change in what I cook. (a dish has to be seriously rockin' for me to cook it more than once a month.)
This one is pretty darn close. I really enjoyed the stickiness of the honey and the flavors of the spices. An easy dish to prepare and once it's in the oven you just need to baste every so often. No monster cooking skills needed.
Serve up a nice side of couscous or a light salad and you've got a great meal that's budget friendly and kid friendly!

- 2 lbs chicken thigh fillets
- 1/3 cup fresh orange juice
- 1/3 cup honey
- 2 tsp olive oil
- 2 garlic cloves, crushed
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp turmeric
- 1 orange, thinly sliced
- Finely chopped fresh chives, to serve
Method
- Place the chicken in an ovenproof dish. Add the orange juice, honey, oil, garlic, coriander, cumin and turmeric and gently toss until combined. Season with salt and pepper. Cover with plastic wrap and place in the fridge for 1 hour to marinate.
- Preheat oven to 350F. Place the orange over the top of the chicken. Roast in the oven, basting with pan juices, for 45 minutes or until golden and cooked through. Place on a serving platter and top with chives to serve.
