Menu for May 2-6: Monday- Breakfast Pizza

This week's menu is a wide mix of cuisines.  With family in town for the last few days, I wanted something quick and simple for Monday night.  I don't have pizza sauce, so I'm just going to use marinara.  I'm also going to add some bacon, green onion, shallots, and parsley.  (Also, see the video at the end for another version of breakfast pizza and how the chef puts it all together.)

Ingredients:

Pizza dough (enough for 1 large pizza), brought to room temperature
2 tbsp cornmeal
3/4 cup pizza sauce (or marinara sauce)
red pepper flakes (optional)
6-oz shredded fontina cheese (may substitute mozzarella, or Monterey Jack)
6-oz hot or mild Italian sausage, sliced, cooked, drained (I'm just using turkey sausage ground up)
4 whole eggs (cracked into individual ramekins...if you have them) 
black pepper, to taste
1/3 cup grated Parmesan
baby arugula, washed and dried
olive oil


~my additions:  
2 tablespoons minced flat-leaf parsley 
2 tablespoons minced chives
4 Slices cooked bacon crumbled
2 scallions, thinly sliced (added with sausage and cheese)*
1 shallot, minced (added with sausage and cheese)*

*I like my onions cooked.

Directions:

Heat oven to 450.  (The video says to cook for longer than the dough package, so I'm going to follow package directions for time.)  
- Since I don't have cornmeal, I'm going to oil the cookie sheet, put dough on it and make sure to oil the dough after you've stretched it out...before adding toppings.


Spread out dough on a cookie sheet.  Add sauce, sausage, bacon, shallots, , red pepper (if using), scallions, and cheese.

Remove the pizza after about 7-8 minutes.
  
Gently slide the eggs out of the ramekins and onto the pizza.  Put pizza back into oven.  I'll start to check them after about 3 minutes.  (my oven is temperamental)  Watch the video to see how the yokes should look.  After eggs are set, sprinkle with chives and parsley.  Enjoy!

First off...this was SO good!! I mean really, really good. The flavors were wonderful and I was full after one piece!
Okay, the bad...I overcooked the damn eggs again. I swear I'm going to get this right at some point. But even though I didn't have the lovely, gooey yolk, it still rocked.
We're going to make this again this weekend with the other pizza dough I bought. Maybe I can get the eggs right this time!

I just LOVE this.. look presentation and the taste. baked eggs are delicious, gonna give this a shot soon!
