Menu for April 26-29: Tuesday-Tex Mex Beef & Mac

No, this isn't the little talking glove beef and mac...this recipe has more kick to it!  :)  I found this recipe years ago and I've always enjoyed it.  You can alter it quite a few ways too.  Great, simple, quick weeknight meal.  Some fun ways to tweak the recipe:  add jalapeƱos, use variety of pasta shapes, different types of cheese, try fresh tomatoes, add spinach... possibilities are endless!  :)   Serve with a nice side salad.




Ingredients:
1 lb ground sirloin
2 cans (14oz) stewed tomatoes (undrained)
*note: for a little more smokey flavor, use Fire Roasted tomatoes*
1 can diced green chilies (pick your spice..mild, med, hot)
1 Tbs garlic powder
1 tsp smoked paprika
1/3 cup uncooked elbow macaroni (or other fun pasta shape)
1/2 cup shredded Pepper Jack cheese (or cheese of your choice)


Directions:
In a pot, cook macaroni noodles till JUST firm (do not cook all the way)
Heat a large skillet over medium high heat.  Add ground beef and brown well.  (I season mine with a bit of garlic powder, black pepper, and salt)
While meat browns, in a bowl combine tomatoes, chilies, smoked paprika, and garlic powder.  Once meat is brown, add tomato mixture and noodles.  Cook 5-10 minutes or until noodles become al dente (cooked, but not mush).
Stir in cheese.
Spoon into bowls and enjoy!!


*Note:  pepper jack cheese can be a bit spicy for some.  If you want a more mild taste, use regular Monterey Jack or Mozzarella.
