Friday: Pizza Muffins- "Breakfast" for dinner

I've mentioned before how much I like using muffin tins to make a fun meal. These sounded just too good not to try. I mean...it says pizza, how bad can they be? Quick and easy to make and the bonus is that they are full of veggies. (shhh...don't tell your kids!) ;) A nice salad would be fun to have with these. Or for a more breakfast feel, some sausage links or even a fried egg.

Duck Eggs???

Last week I posted about some lovely quail eggs that I bought at the Farmers Market. The next trip there I found myself staring at some very large eggs amongst the quail and chicken eggs. "What are those?" I asked the guy. "Duck eggs." Huh. "Okay, I'll take 4."
Now here I am with 4 duck eggs and no idea what to do with them. Off to the internet I go!
Can you guess? Which is the chicken, which is the duck?

Mother's Day Feast

Mother's Day can mean so many different things to so many different women. Some like to have an entire day to themselves, others like to spend the whole day with their family. I find myself in the middle of both. I want to be pampered a bit, a little down time, but I also want to be with those who've made this day mean something to me.
We'll be spending our day tomorrow something like this:
Girls and daddy will be making a gorgeous breakfast: Creme Brulee French Toast.
Followed by a trip to the Farmer's Market and then some fun in the sun at the beach. Nap time for girls and reading time for mom, while my hubby shops for dinner goods. Then he and I will prepare our dinner feast. I truly don't mind a bit of cooking on Mother's Day...blame it on my need to always be doing something. We've come up with a brilliant plan for dinner...

Menu for May 2-6: Monday- Breakfast Pizza

This week's menu is a wide mix of cuisines. With family in town for the last few days, I wanted something quick and simple for Monday night. I don't have pizza sauce, so I'm just going to use marinara. I'm also going to add some bacon, green onion, shallots, and parsley. (Also, see the video at the end for another version of breakfast pizza and how the chef puts it all together.)

Got a couple dozen leftover Easter eggs???

One of my fave memories is shelling our beautiful colored Easter eggs...and making pickled eggs. Yes, you read that right...pickled eggs. Now, now, don't stick up your nose already! If you like pickled beets (which I love)...you'll love pickled eggs. Even if you've never tried these, it's really simple and the kids get a kick out of the pinkish-purple eggs. They make great egg salads too! This recipe is super easy...there are a ton of variations to make these, but this is my mom's way. :) We like the vinegar bite to it, so add as much or as little as you want. We don't add any extra sugar either.
Ingredients:
1 dozen hard boiled eggs - shells removed
2 cans Pickled Beets (or more...enough to cover the eggs)
1 cup Apple cider vinegar (or to taste...Mom's way is just to add a bit, taste...add a bit, taste)
Directions:
Place eggs in a large bowl or an extra large empty pickle jar. Pour both cans of beets over eggs (I leave the beets in with the eggs) Put in the fridge and...wait. :) It'll take a day or too. You want that nice deep color to the eggs.

Thursday: Breakfast for dinner

I have become slightly obsessed with eggs...I eat some almost every day. Trying to find new fun ways to make them. I could save time and buy pre-made hash browns, but I want to make my own (healthier too). So, aside from shredding the potatoes, (which my mandolin will make quick work of...) this recipe is a breeze to make. I'm going to double the recipe to serve four. Prob serve with a side of turkey breakfast sausage and a nice cold glass of OJ. :) (you could also sprinkle some bacon on top for some added flavor)

Directions
Fry 2 cup each chopped onion and grated potato in a cast-iron skillet with butter until crisp. Add 1 cup grated cheddar. Make 4 small dents in potato with a spoon and crack in 4 eggs. Bake at 425 degrees F until set; top with salsa.
*My Note: This recipe was originally set for two people, I have changed to serve four.

Pizza for Breakfast!

Are your kids in a breakfast rut?? Cereal each morning? Try this one day and surprise them!
*Kid Korner: have the kids spread on the cream cheese and add their own fruit toppings
We made these for my daughters birthday party. The kids had so much fun putting them together.

We made these for my daughters birthday party. The kids had so much fun putting them together.
Fruity Breakfast Pizza.
Here they are coming together in the prep area. I didn't add the bananas until right before we were ready to create...didn't want brown banana pieces! :)
Fruity Breakfast Pizza:
- English Muffins (I used Trader Joe's Brand)
- Strawberry Whipped cream cheese (or any other kind your kids like)
- A Sprinkling of Cinnamon and Sugar
- Fruit of Choice, cut into bite-size pieces (I used Strawberries, Bananas and Blueberries)
Halve muffins. Spread with cream cheese and sprinkle with cinnamon and sugar. Arrange fruit on top, and toast in oven.

Breakfast Bliss

A friend reminded me that I forgot to post this yummy recipe! I can't take the credit...I got it from the lady working the sample counter at Trader Joe's. No way is this a healthy breakfast, but for those days when a cup of oatmeal just won't do...whip these up.
I have no idea what to call these...so if you have a creative name, I'd love to hear it!
