Peanut Butter Cupcakes

Okay, so my friend is a fabulous cupcake maker and when she offered me a taste of these bity bites, I was a little hesitant.  Not that they wouldn't taste good...just, thought they'd be wicked sweet.  As usual, I was wrong.  These were SO light and SO SO yummy!  Just a hint of peanut butter to round of the delish taste of chocolate.  These are worth putting in your cupcake recipe folder!  Thanks Lena!  for the Fab recipe!  You can find more of Lena's amazing cupcakes at Lena's Cupcakes and Sweets

So, for the cupcakes I usually just purchase a chocolate cake mix of any kind. (chocolate cupcakes from scratch are never that tasty....so far) 

The recipe for the peanut butter frosting is shown below:

Peanut Butter Buttercream Frosting

3 cups powdered sugar
1/3 cup peanut butter
1 1/2 tsp vanilla
1/4 c. milk

In a medium bowl, mix the powdered sugar and peanut butter with a spoon or electric mixer on low speed. Stir in vanilla and and half of the milk. Gradually beat in just enough remaining milk to make frosting smooth and spreadable. If frosting is too thick, add a few drops of milk. (this recipe will be thicker than most frosting recipes due to the peanut butter)

I like to top it off with chocolate shavings or a piece of Reese's Peanut Butter cup candy. This peanut butter frosting goes great on white/yellow cupcakes as well.
