Thursday: Grilled Chicken Thighs with White Barbecue Sauce White BBQ Sauce & Grilled Asparagus
Pin It Now!I love when chicken thighs go on sale...they are so versatile and there are so many recipes to chose from. I grabbed this recipe so I could spend some time cooking on my grill. Going to make the white bbq sauce with it as well. Serving with a side of sweet potato fries and asparagus.
okay, so I forgot to put the sauce on the plate when I took the picture...but we did use it and it was yummy!
YIELD: Makes 5 servings
PREP TIME:
OTHER: 6 HOURS, 10 MINUTES

Ingredients
1 tablespoondried thyme
1 tablespoondried oregano
1 tablespoonground cumin
1 tablespoonpaprika
1 teaspoononion powder
1/2 teaspoonsalt
1/2 teaspoonpepper
10 skin-on, bone-in chicken thighs (about 3 lb.)
Preparation
1. Combine first 7 ingredients until blended. Rinse chicken, and pat dry; rub seasoning mixture over chicken. Place chicken in a zip-top plastic freezer bag. Seal and chill 4 hours.
2. Preheat grill to 350° to 400° (medium-high) heat. Remove chicken from bag, discarding bag.
3. Grill chicken, covered with grill lid, 8 to 10 minutes on each side or until a meat thermometer inserted into thickest portion registers 180°. Serve with White Barbecue Sauce.

White BBQ Sauce
YIELD: Makes 1 3/4 cups

Ingredients
1 1/2 cupsmayonnaise
1/4 cupwhite wine vinegar
1 garlic clove, minced
1 tablespooncoarse ground pepper
1 tablespoonspicy brown mustard
1 teaspoonsugar
1 teaspoonsalt
2 teaspoonshorseradish
Preparation
Stir together mayonnaise, vinegar, minced garlic, pepper, mustard, sugar, salt, and horseradish until blended. Cover and chill 2 to 4 hours. Store in an airtight container up to 1 week.

Grilled Asparagus
YIELD: 4 servings
Ingredients
1 poundasparagus
3 tablespoonsbalsamic vinegar
2 tablespoonsfresh lemon juice
1 tablespoonolive oil
1 tablespoonlow-sodium soy sauce
1/8 teaspoonblack pepper
Cooking spray
Preparation
Prepare grill.
Snap off tough ends of asparagus. Combine all ingredients except cooking spray in a large zip-top plastic bag; seal and marinate for 30 minutes. Remove asparagus from bag, and discard marinade. Place asparagus on grill rack coated with cooking spray; grill 5 minutes on each side or until asparagus is done.
This was a fantastic rub. Great flavor. I realize I forgot to add the sauce to the plate when I took the photo...one of those nights. :) The sauce was excellent, both girls liked it. It would make a wonderful dip for veggies or to use on other meats. The grilled asparagus was super delish...great flavor here as well. All in all, three keepers.
