This dish was just amazing. So le...WOW WOW WOW!!! This dish was just amazing. So let me give you the breakdown:<br /><br />~ first off, this takes TIME...you have many steps and you can't rush it.<br />~ Lardon... so, I bought a package of Salted Pork and used that. It's the closest I could find. I sliced mine a little too thin, next time will do thicker.<br />~ make sure you dry your beef before browning and do it in small batches<br />~ this recipe calls for 1lb of mushrooms, so you need to brown them in two batches.<br />~ I don't have an enamel skillet, so I had to make do..it worked out ok. :)<br />~ I used a Cote Du Rhone wine in the sauce and I braised the onions in a red Pinot.<br /><br />The onions were so sweet and the sauce was so very good! The house smelled amazing! Again, you don't really need technique here...just time.
